Reserve the remaining citrus syrup you can use for brunch beverages, sweets, or to make additional servings of this cocktail.
Bikini Recipe
Makes enough for 10 servings
To make the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Cocktail (makes 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Instructions
To prepare the Citrus Syrup: Put the listed ingredients into a pot, heat until it reaches a simmer, agitating so the sugar melts. Next, remove from the burner and let it to cool down entirely. Transfer into a clean bottle, cap it and refrigerate it in the refrigerator, where it will keep for about one month.
For the Cocktail Base: Mix the specified liquids into one big jug, leave to sit for an hour, then filter it , ideally through cheesecloth, so it's completely strained.
To serve: Add 85ml of your cocktail base into a mixing glass packed with ice, gently stirring lightly for one minute until cold. Filter into a cold coupe glass or a similar vessel, garnish with a few cranberries adding the final touch with a quick spritz with the mandarin essence over the drink.
